Let’s just call it The Big Freeze. As someone that likes to organize and likes a plan, it makes sense that I like to have some extra food ready to go for meal time. I’m able to do that by planning in advance which includes freezing some foods. Below I’m listing some of the foods you can freeze today to save time tomorrow.

Vegetables

Spinach– Oh boy, do I use this. I buy the spinach in bulk, the bag is almost as big as me. I individually bag and keep in the freezer. (Make sure it’s dry and to get the air out) What do I use it for? You name it! Smoothies, Spaghetti Sauce, Soups, Omelettes. the best part? Once it is frozen it is easy to crumble into tiny piece, which means it can be easily hidden!

Shredded Carrots and Chopped Onions– Great to throw in soups, especially this Chicken Gnocchi one I recently tried! Bell peppers can be frozen for later use too!

Meats

Beef– I always buy ground beef in bulk. I brown it all with garlic and then freeze into quart size bags. These are great to grab when making spaghetti sauce, vegetable soup, hash brown casserole and more.

Ham– Yep, that Easter ham feeds us months later. I chop it up and save to use in lima beans, okra and tomatoes (recipe here), and quiche recipes. Speaking of quiche, I make 2 and freeze one of them as well for later use. Grab, thaw and serve with a salad.

Chicken– The top item I never leave Costco without is a Rotisserie chicken. We rarely eat it immediately. I take the white meat and individually bag and freeze. I finely shred chicken that will be used in casseroles and leave larger pieces for soups and stir fry.

Other

Here are a few other foods you can freeze you may not think about. Fruit on borrowed time? I freeze in small snack size bag for smoothies instead of tossing.

Baking a chore? I always double the recipe and freeze the cookie dough. For my oatmeal raisin cookies I portion out and freeze in bags. You can pop them on the cookie sheet and bake whenever you have a craving. (Allow a few extra minute if baking frozen)
