The appetizer I can’t stop talking about, marinated cheese. Either you’ve had this app and know how amazing it is, or you are getting ready to be in for a treat! Either way, bookmark this one!

I recently served this at a holiday party, but it would work for a super bowl party, oyster roast appetizer and more. The colors are festive, and the taste is amazing!

Serve with crackers

Marinated Cheese ingredients:

1 block sharp cheddar, sliced

1 1/2 block cream cheese, cubed

Small jar pimentos, drained

Mix: 1/2 cup olive oil

1/2 cup red wine vinegar

1 1/2 TBSP scallions

3 garlic cloves, minced

2 TBSP chopped fresh parsley

3/4 TBSP dried basil

1/2 tsp salt and pepper

A few substitution options: You can use white wine vinegar if you have that on hand. Italian seasoning would work if you don’t have dried basil. You DO need the fresh parsley, don’t substitute for dried as the color will not be as vibrant.

Layer the cheese in a dish. Mix the other ingredients and pour over the cheese. Refrigerate overnight. Make sure to pull out a few hours before serving, as the olive oil solidifies and needs to be back to room temperature. I typically move to a different tray, as the olive oil mixture can be messy. The marinated cheese is amazing alone. You can serve with crackers as well.
