Two resolutions I have this year: Eat more green and wear more green! I’ll tell you about why I don’t own any green clothes in a minute, but first this easy marinated vegetable recipe.

This recipe is packed with veggies, nutrients and flavor! I use one head of broccoli and cauliflower and chopped it up fairly small. Next, add the drained olives and crumbled feta. (You can substitute blue cheese here too.) Then make Italian dressing from the packet- old school style. No time? I bet Garlic Expressions dressing would be good on this as well. You can add diced or sliced grape tomatoes to this too. My crew doesn’t love raw tomatoes, so I skip them.

theCollarfind tip: Make this ahead of serving so the vegetables take on the flavor of the dressing. Also if you have leftover grilled chicken, add that to the mix to add some protein to this marinated vegetable recipe and serve it as the main dish.

Now back to the other resolution: wear more green. I was a broadcast meteorologist for years, and I could never wear green because of the green screen on tv. I never bought that color and the habit stuck! I wore it recently in an Instagram video and so many people left sweet comments that I decided to add more of to my closet.
