Pimento cheese. It’s a staple in the south. You can buy it in a pinch, but making it homemade- that’s taking it to another level. I’m sharing two different recipes – the traditional take, but also a unique recipe using Trader Joe’s Unexpected Cheddar. And the ways you can serve it are endless!

Southern staple

This is a great recipe to make, especially if you are feeding a crowd! I keep it in the fridge and pull it out and use it various ways once a make big batch. It’s a thicker version of pimento cheese than most, but you can add more mayo if you like it creamier.

Pimento Cheese Recipe

2 cups freshly grated sharp cheddar ( Or 1 block Trader Joe’s Unexpected cheddar)

1/2 cup medium cheddar grated

1 block cream cheese, room temp

Important: 1 TBSP grated onion

1 TBSP Duke’s Mayo

3/4-1 jar pimentos, drained

Cayenne, salt, pepper to taste

Mix all and refrigerate.

Want creamier? Add more mayo. Want a kick? More cayenne. Just don’t skip the grated onions, it’s the secret ingredient that makes this pimento cheese recipe taste so yummy. And only use Duke’s, it’s the only mayo used in the south as far as I’m concerned.

Yes, pimento cheese goes great with crackers, but here are a few more ways to serve this savory treat:

  • Sandwiches with white bread.
  • Burger topping
  • On top of a grilled steak- so good.
  • Add red pepper jelly on top for a sweet touch
  • Serve in phyllo cups heated for an appetizer, topped with the pepper jelly
  • Sneak it in for an extra creamy omelette
