I have found a quick and easy weeknight meal recipe: meatball subs. My daughter first had these at camp and could not stop talking about them. They are the favorite of my picky eater, and they are so easy to make!
First up, start with the meatballs. I use 2 different kinds: the premade fresh not baked variety from Publix and the frozen bag of Italian meatballs from Costco. For the not baked, you will need to bake them first according to directions and them add them to sauce to simmer. For the frozen ones, just add to a jar of Rao’s spaghetti sauce. ( I used to make the sauce from scratch, but Rao’s tastes the same. It may cost a little more than the others on the shelf but it is so worth the price! ) Let simmer until meatballs are warmed- about 30 minutes. As far as quantity, I tend to make extra, but allot for about 4 meatballs per hoagie roll.
What makes this an easy weeknight meal recipe: meatball subs are something that kids can assemble themselves. I use Hoagie rolls and toast them with butter while the meatballs simmer. You can offer mozzarella or parmesan cheese to melt over the top and provide extra sauce for dipping if you choose. If you are going low carb, you can eat them solo without the bread, which is what I prefer to do.
