Wondering what to do with all of the garden tomatoes? How about an abundance of basil? This is a take on the caprese salad recipe, super simple and very yummy!
This caprese salad is s super simple side salad, and you can use what you have on hand to make it.
In this caprese salad recipe, I recommend using the smaller grape or cherry tomatoes that you can slice, but any kind of tomatoes will work. If you can, find the mozzarella balls.(At my grocery, you can find them in the gourmet cheese section.) If not, no biggie. Buy the sliced tomatoes or use what you have in your garden and chop it up.
theCollarfind tip: The trick is to use balsamic glaze as opposed to balsamic vinegar. It’s thicker with a stronger flavor, start with just a drizzle as a little goes a long way.
You can serve this as a side salad, but it is also great with grilled chicken or fish. I love the tri color tomatoes, they just look a little fancier. And who doesn’t like fancy?
