Ever have a recipe that is a happy accident? This white chicken chili recipe is mine. I know there are tons of recipes for this out there, but I was short on time and the grocery store was short on ingredients (who runs out of green chilies?). This soup was a hit!

2-3 chicken breasts, shredded (I used rotisserie chicken)

1 jar salsa verde

48 oz. chicken broth

1 white onion, diced

1 jalapeno, seeded and diced (I used 4 banana peppers from my garden instead)

2 cans white north beans drained plus 1 can pulsed beans

1/4 tsp lime juice, 1/4 tsp cumin, salt and pepper to taste

Hot Sauce to taste, I used red clay and a generous pour by accident. It was really good!

Toppings: scallions, sour cream, shredded cheese, avocado, lime slices

This is so simple to make.

Combine the broth, salsa verde, chicken and 2 cans of beans and simmer.

Saute onion, garlic and peppers until browned.

Pulse 3rd can of white beans, add to broth mixture. This adds creaminess and thickens the chili.

Combine with sauteed veggies, lime and seasonings, simmer and serve with fixings on the side. I set up a whole bar of toppings and the crew went through the line and added what they wanted.

TheCollarFind tip: You may want to double this recipe. Mine was gone in one night- I think my husband had 4 bowls! This will freeze well too.
