When the temps drops, the soup recipes come out at the Collar household. One of the tried and trues is this creamy tomato basil soup recipe. It’s filling and great served with a crusty grilled cheese!

You can get all of the ingredients at the grocery and consider buying double to freeze a batch too! I use a blender to make this tomato basil soup recipe, but a food processor works well too.

Here’s what to do: Chop herbs finely. Add tomatoes, cream ( I use half and half), and spices. Pulse until completely blended. Simmer over low heat.

Optional:

*Place a parmesan rind or a rind from a hard cheese in the soup while it simmers to add cheese flavor. (1,000 Day Old Gouda rind from Trader Joe’s is really good, too). 

Add a frozen bag of spinach crumbled when you add the herbs (if you follow this Collarfind trick)

*Serve with shredded parmesan cheese on the side. Garnish with fresh herbs.

An added bonus is the health benefits of this creamy and filling soup. Tomatoes are full of antioxidants that can reduce the risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K. Basil also contains antioxidants, vitamins and minerals.
