No Monday blues here! Serving up Healthy, Easy Vegetable Soup Recipe featuring gumbo veggies in vintage blue and white bowls this rainy Monday. This is a hearty thick soup, perfect for those that still want to feel full after their meal.

One thing that makes this recipe different is the gumbo vegetables. I’m not sure why, but the ideas of green beans floating on my soup does not do it for me. Gumbo vegetables consist of onion, okra and corn. Sometimes I even add extra okra and fresh cherry tomatoes to the mix! Those tomatoes pop after simmering for a bit, and they are so good!

theCollarfind tip: Make it even healthier using ground venison (like I did here) or ground turkey. At the least, lean ground beef is the best option. I brown mine with onion and garlic.

This is served well with yummy cornbread, a side salad, some Sister Schuberts rolls or grilled cheese on the side.
