If you have a rotisserie chicken, you have the beginnings of a homemade chicken stock. Here’s why I love the idea of making your own- you can control the sodium, always have it on hand for soups, and it’s yummy too!
Here’s what you need:
1-2 chicken carcass (I hate that word)
2 cups carrots and celery each, chopped about 2 ” long
I onion, quartered
1 lemon sliced, if you desire
6 cloves crushed garlic
Seasonings- salt and pepper
Cover chicken and ingredients with water. Bring to a boil and then to simmer. Simmer 2-4 hours covered on low. Strain, discard whole ingredients and freeze stock for later use.
The beauty of this homemade chicken stock is you can use what you have on hand. Throw a parmesan rind in there, add bay leaves or a favorite seasoning like thyme. I would skip super aromatic herbs like cilantro and basil as they tend to work in certain dishes.
