A pina colada is one of my top 5 libations. Sadly, they are also one of the top 5 most fattening cocktails. So I grabbed a pineapple, did a little research and found the taste of the summer concoction without the calories. It’s the perfect recipe for a skinny pina colada! It is still a top summer drink, it just smells and tastes like the beach! Now you can enjoy it without any guilt.

Fun fact: The Pina Colada was first served in San Juan, Puerto Rico in a Hilton bar in 1954. It actually means “strained pineapple.” We’re going to substitute the strained for frozen in my version.

Skinny Pina Colada Recipe:

2 Shots Malibu

2 cups frozen pineapple, needs to be frozen

1/2 cup coconut water

1 cup ice

Optional: 1/2 banana, Dark rum floater

Blend and serve!

theCollarfind Tip: Your pineapple needs to be frozen. I used VitaCoco water with pineapple. Friends went back for seconds and thirds, so you may want to double it! If you want a stronger flavor, use less ice, but you use a little of the frozen factor. You can add a banana if you desire as well for extra creaminess. And feel free to add a floater of dark rum, that’s always a tasty addition!
