February is the month of love, and what better way to celebrate than popping the bubbly and a champagne cocktail. The good news about this cocktail is that it’s not many ingredients, easy to make and you can switch it up according to your taste while still looking like a master mixologist!

Champagne Cocktail

First, you want to start with a good champagne or prosecco. My personal favorite is LaMarca or Blanc de Blancs from Trader Joe’s for prosecco. As far as champagne, can you really get any better than Veuve? I mean, really?

You want to mix it up with simple syrups, and there are so many flavors to choose from! I chose spicy for Valentine’s because my husband loves when his cocktail has a kick! I placed freeze dried strawberries in the glass before pouring. The bubbly actually rehydrates them and it adds a little flavor and a little sweet to offset the spice.

theCollarfind tip: Let your garnish be determined by the flavor of your simple syrup! If it has orange, use a freeze dried orange slice. Spicy? Place jalepeno slices on a bamboo pick across the top. So many options!
