Ready for a salad that you can make in advance and not worry about it wilting? This it it! This brussels sprouts caesar salad recipe- a lot to say I know- is the perfect twist on a classic. I make this at the beginning of the week and eat it for lunch almost every day.
So in this brussels sprouts caesar salad recipe we are switching out the boring romaine for the shaved brussels sprouts. I start by squeezing the lemon over the sprouts. My friend always told me to do with this kale to break it down a bit, plus it brightens up the flavors in the salad.
Next I add the dressing and cheese. I use the Marzetti’s Simply Caesar, and I use about 3/4 a cup. Add the shredded- not grated- parmesan and salt and pepper to taste. Combine really well, pt the salad back in fridge and let it sit for a few hours. Now for some additions- You can add crusty croutons, tomatoes, even a protein like grilled chicken.
theCollarfind tip: The only place I can find the shaved brussels sprouts are at Trader Joe’s. If you see them somewhere else- let me know! You can straight dump them in or chop them to even smaller bite size pieces.
