Need a quick snack for the boat, pool or summer afternoon? Try these pickled okra rolls, the perfect low carb snack. We also call them Southern Sushi, because I do love a fun name and a theme!

First, about the okra. I recently had some teens from Maryland here in South Carolina at our home. They had never heard of okra or tasted okra, much less the pickled version. Okra is a warm-season vegetable. It is a good source of minerals, vitamins, antioxidants, and fiber. I like it pickled, it is less slimy. You can buy it near the pickles in the grocery store, or pickle it yourself. Our friends give us some for Christmas every year, it’s our favorite.

The best part is this a low carb snack. I use the reduced fat cream cheese to cut down on calories, too.

theCollarfind tip: If you just can’t do okra, substitute pickle slices, they are just as good! You want to use thicker ham so it doesn’t tear when spreading the cream cheese, and can substitute salami if that’s your preference. The pickled okra is available in mild and hot. Wickles makes a version, too but it is much sweeter. If the pieces are small, use 2 in each roll.
