This recipe checks all of the boxes, and it’s easy to prepare. You are getting proteins and vegetables in one dish, as there’s no time to make a lot of separate foods on a busy night. It’s yummy too!

Recipe:

2 packages each of Mushroom Ravioli ( I use Rana ), Cherry tomatoes, (slice or cook long enough that they burst) and fresh portabello mushrooms

1 clove chopped garlic

Rotisserie chicken (Optional)

Parmesan Cheese

About to simmer…the longer, the better with this mushroom ravioli recipe

Time to multitask, which all moms know how to do! Simmer the tomatoes, mushrooms and a little garlic while the ravioli boils, and add salt and pepper to taste. Place cooked ravioli in veggie mixture and 2 tbsp of the pasta water. Add the chicken- a rotisserie one will work fine, and it will cut down on prep time! Stir and simmer for 5 minutes,and top with parmesan. Enjoy this quick easy meal, and hopefully you will have a few leftovers to enjoy as well!
