Grilling steaks? Throw a few extra on the grill and supper will be ready for the next night too with this steak salad recipe! Typically, my husband likes to grill on Sunday nights. While the grill is hot, (and since someone else is cooking) I came up with an idea that could help with dinner plans the rest of the week. Now, we double the amount of protein on the grill to use the next night for dinner.
The best thing about this steak salad is that you can make it your own by changing up the toppings. And the fact that you don’t even have to turn the oven on to serve up this dish is a plus too!
It looks fancy, but it’s such an easy recipe. (That’s how I roll.) This steak salad is all about the presentation. You simply line the ingredients vertically to make it look like it took hours in the kitchen! Bonus, this helps the picky eaters pick out their own toppings, without having to make a separate meal for them.
The Steak Salad
*Lettuce- You need a lettuce with crunch, but also flavor, like romaine. Stay away from the iceberg.
*London Broil- (Costco has the best price), sub Grilled chicken if that suits your crew
*2 kinds of Cheese- Smoked Gouda and Clemson Blue Cheese, I place different kinds of cheese on both sides.
*Croutons- I make homemade, they take no time. Toast diced french baguette bread coated in olive oil and parmesan for 10 minutes at 350 degrees.
*Sliced tomatoes
*Red onion, my marinated onions (find the recipe here), work well with this dish too!
*Scallions
*Avocado
Chimichurri dressing- Now for the best part!
- 1 garlic clove
- 1 cup fresh cilantro
- 2 tablespoon red wine vinegar
- 1 tablespoon lime juice
- 3 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- salt & pepper to taste
As for the toppings, I use 1/4 to 1/2 cup of each. Other salad topping options: grilled, corn, slivered almonds, dried cranberries ( if you are using chicken), so many possibilities!
