If you ask me, pumpkins belong in the kitchen as much as they do on the porch. Pumpkins are packed in vitamins and minerals and low in calories. When most people think of pumpkin r food they think of pie, but I have a pumpkin chili recipe you would not even know has pumpkin in it!

Chipotle Chili

A few notes: Saute onion and garlic in olive oil and then add meat to brown. Drain ( if needed ) and add to the rest of the ingredients. Let all of the ingredients simmer. The Chipotle Cholula Sauce really makes the dish, but always taste as you may want to add more. It’s not spicy but more of a smoky flavor. Let simmer all day on the stove so the beans soften up and the flavors blend together.

Want to get super fancy? Serve this pumpkin chili recipe in a hollowed out pumpkin. I serve mine with sour cream and shredded cheese on the side. ( I substitute greek yogurt for sour cream for a healthier alternative.)

Picky eaters? I may have told my family I forgot to add the pumpkin to see of they could tell. They had no clue. Just call it Chipotle Chili and no one will know!
